We cook lots of Mexican-inspired dishes at our house. We all love the basic combinations of meat, beans, corn, and spice. Cheese, too - you can't have too much cheese. 😉 Serving a simple dish like a taco is a great way to meet everyone's personal preferences, though, because while I'm a fan of the cheese and salsa, my husband would prefer to have massive heat and the kids want the vegged-out version.

A super simple soup that with all the flavors of Mexico

Ingredients
- 4 cans of beans (your favorite mix of black, pinto, and kidney), drained and rinsed
- 1 onion, diced
- 5 c. water
- 1 small bag of frozen corn
- 1 packet of taco seasoning
- 1 packet of ranch seasoning
Optional
- salsa
- cheese
- tortilla strips
- sour cream
- diced tomatoes
Instructions
- Empty the beans into a stockpot.
- Add the diced onion, water, seasonings, and corn.
- Cover and simmer for 30 minutes.
- Serve with your favorite choice of toppings.
